    1. +--*** **----- A large, firm, tart apple is best.
    2. Use Ida Red or Northern Spy.
    3. A Cortland can be used.
    4. However, if you use a McIntosh, you must shorten the cooking time.
    5. Core apples and remove top inch of peel.
    6. Make a shallow out through skin around centre of each apple to prevent skin from bursting.
    7. Place apples upright in baking dish or pie plate.
    8. In a small bowl, combine brown sugar, raisins, cinnamon and nutmeg.
    9. Spoon into centres of each apple.
    10. Add water to cover bottom of dish.
    11. Bake, uncovered in 375 F for 25 to 30 minutes for less firm apples and up to 50 minutes for firm varieties or until apples are tender when pierced with a toothpick.
    12. Combine the yogurt and maple syrup to make the sauce.
    13. Pour over the baked apples.

  • 1/4 c Raisins

    1. Bring the apple juice or maple sap to a boil and place ham into it.
    2. Cover and simmer over low heat for 3 hours, or till the ham is tender.

    7. Thicken the juice to taste with browned flour, blended with cold water.
    8. Serve the delicious sauce with the warm ham (which is equally good cold).
