Nueva cocina cubana is a loose term used to describe a new awakening in Cuban cooking. Combining fresh, innovative ingredients and exciting new flavors with a traditional Caribbean base, the ideas have their roots in the US and owe a notable debt to celebrated Cuban-American chefs such as Douglas Rodr guez. Fostering close ties with gastronomic gurus in France, Spain and the US, La Guaridas chefs keenly absorbed international influences and slowly began to fuse traditional Cuban food with more exotic European and North American flavors. The results were as tasty as they were unexpected: tuna infused with sugarcane, chicken in a lemon and honey sauce, and caimanera (a fish indigenous to the Guant namo region) panfried in onions and white wine. Word of these delicacies spread rapidly and, before long, a roll call of big names was descending on La Guarida: Jack Nicholson, Uma Thurman, Matt Dillon, Queen Sof a of Spain, plus a plethora of US congressmen. Not to be outdone, other paladares quickly starting jumping on the culinary bandwagon. Housed in old grandiose houses in the neighborhoods of Vedado and Playa, places like La Esperanza and La Cocina de Lilliam were soon churning out equally delectable dishes, and recipes were being developed and expanded. 06 April 2006 Dohuk to Arbil It s still raining when I get up and as I leave Dohuk it starts to bucket down again, a condition which continues all the way north to Amadiya which I was expecting to have hints of a Kurdish mountain escape but, in the rain, it turns out to be simply a miserable dump. Perhaps it all looks better when the sun s shining and indeed, as I head south again, glimpses of snow-dusted peaks appear. Travelling east towards Arbil seems to require lots of diversions, presumably to avoid approaching too close to Mosul. There s lots of security but it seems to concentrate on checking each vehicle s inhabitants, presumably Arab passengers get more than a cursory glance. Only once today (and once yesterday) do I have to produce my passport and explain what-the-hell I am doing in Iraq. Arbil is a delight as well, I d always thought that Damascus was the world s oldest continuously inhabited city but Arbil (Hawler or Hewler in Kurdish) disputes that claim. The modern city crowds around the ancient citadel and inside I discover a superb recently opened textile museum run by Lolan Mustefa, who is a mine of information on Arbil and the surrounding region. I woke up in the middle of the night worried about how the crossing to Iran might go and that unease coloured the rest of the day. Add a similar time from the border to Tabriz and it s going to be a push to get it done in one day, especially if there are any delays at the border. Beyond Arbil the road starts to climb and then runs through the spectacular Rowanduz Gorge along the Hamilton Road . This fine piece of British colonial road building was managed by Alexander Hamilton, a young New Zealand born engineer, between 1928 and 1932. This is nothing like the busy crossing I ve made from Turkey, it s a very remote region surrounded by snow-covered peaks and little else. Western Australia put the taste in the nation s beer, and it s still the prime place to sample microbrews. Work up a thirst for the best in the west. The best cold beer is VB - it sounds like an advertiser s fabrication, but for most of Australia s brewing history it s been the terrible truth. With competition like Fosters, Melbourne Bitter, Carlton Draught, Tooheys New, XXXX, Swan and West End - a range of watery, fizzy lagers only bearable when ice cold - VB s claim was perfectly legitimate. bad business credit loan small

But things are changing. In fact, things have been changing since 1984, when a little brewery called Matilda Bay opened up in the Sail Anchor pub, Fremantle, Western Australia. Twenty years later Australia is just about over the shock, and more and more of us are ditching the big brand beers in favour of microbrews. Start your binge - or tour - in Fremantle, the historic port city a thirty-minute train ride south of Perth and its international airport. Unfortunately, you can t visit the Matilda Bay brewery, but who really cares when Little Creatures is open for business every day of the week. This top spot overlooks the Freo harbour and pours the Little Creatures mainstay pale ale (a fresh, hoppy brew) as well as a pilsner, a malty top-fermented bright ale and the low-alcohol Rogers, perhaps the best light beer in the country. They also serve a lamb kebab that will blow your mind. In Freo you can also visit the Sail Anchor - it s no longer the home of Matilda Bay but does have its own in-house brewery. It s a nice pub, but you might want to go there before Little Creatures to avoid a feeling of anti-climax. application bad card credit

Margaret River: a pale ale with a chardonnay chaser

South of Perth, Margaret River has a mammoth reputation for wine, but its breweries are elbowing in on the action. Bootleg was one of the first breweries to open in this region; back in 1994 its claim to be an oasis of beer in a desert of wine was thoroughly justified. These days they pour a butt-kicking Raging Bull dark ale and a crisp, hoppy Wils Pils, with new beers coming on tap all the time. You ll get a lot more shtick and glitter at Colonial Brewing Co, around since 2003. Their theme-park decor and fusion bistro food pull the tourists, but behind the professional gloss there are some excellent beers. If you love a citrusy, coriander-flavoured Belgian farmhouse beer, you have to drop by in summer and taste the seasonal Witbier. To the east of Perth, the Swan Valley has become a great day-trip for foodies, and even more so for beeries. Henley Brook is where most of the action s at, and Duckstein Brewery is one of the most popular stops for tourists getting a taste of the Valley. Duckstein camps up its German origins, with oompah bands, meals consisting entirely of pork products and animatronic midgets clad in Lederhosen welcoming you at the gate. If it s brewed in Germany, Duckstein probably makes a version of it, and their huge range means there s something here for just about any palate. bad credit fix
